In 1977, the Copper Caboose opened its doors at the corner of 4th Street and Boston Avenue in Lubbock, Texas. Founded by John and Frank Fitzpatrick and Frank Smith, it was the first restaurant in Lubbock, Texas to serve fajitas. Serving both chicken and beef fajitas and then added many traditional American and authentic Mexican dishes, prepared by Lupe Gonzales.

The 50th Street Caboose opened in August of 1990 at the corner of 50th Street and Slide Road. It was designed by managing partner Phil Bradley and owner Bob Jordan with a few twists to enhance the proven Caboose concept. A midway with over 100 games and a redemption center stocked full of toys, novelties, and giant stuffed animals help to enhance the fun atmosphere. Serving the same fine Mexican dishes with a few new twists from George Amaya.

The 50th Street Caboose also has party rooms available to conduct meetings, throw birthday parties, have team parties, view sporting events, or have a private get-together with friends. The first of two remodels to the 50th St. Caboose was completed in 1992, increasing it to 17,500 square feet. In 1998, a second remodel brought the Caboose to its current size of 20,000 square feet.

After 24 years across the street from Texas Tech's Jones Stadium, the Copper Caboose moved in June 2001 to its new location at 5609 Avenue Q, just South of the Villa Inn. Weekdays, from 11pm to 2pm, you can enjoy Lubbock's original fajitas from the all-you-can-eat fajita lunch buffet. The Copper Caboose on Avenue Q features all of your favorite Mexican dishes, along with great sandwiches, chicken strips, and a variety of traditional American dishes.

Conveniently located in southeast Lubbock, the Caboose on Avenue Q is a seven minute drive from downtown Lubbock, 10 minutes from the South Plains Mall, and only 12 minutes from Texas Tech University. The Sports Bar features six big screen TVs, eleven booths with individual TVs, and FREE POOL 11 AM to 3 PM everyday.

No Limit Texas Hold'em at the Copper Caboose four nights per week, Monday, Tuesday, Thursday and Sunday. Two games held each night at 7:00pm and 9:30pm. No entry fee. $50 in cash goes to the winner in each game. $25 gift certificate goes to the second place finisher in each game. Beginning in January of 2006, Caboose players will compete to qualify for a WSOP satellite tournament held in Ruidoso, New Mexico. Click here for more details.

In 1976 Bob Corcorran opened a small restaurant called "River Smith's" to supplement an ailing construction career. River Smith's specialized in home-cooked catfish, and fried chicken using recipes that have been a part of the Corcorran family for generations. No- one had ever tasted catfish, or chicken this amazing. Bob worked in the kitchen by day and installed floors at night. That is until enough people tasted River Smith's amazing catfish and chicken. Lucky for us Bob was better at cooking than flooring and so began the culinary adventure known today as "River Smith's Catfish and Chicken". River Smith's became so popular Bob had to give up his flooring career; Bob came to realize that he was a better cook, than floor installer. River Smith's catfish grew in popularity, so much so that diners had to stand around waiting for a place to sit to enjoy their lunch. Bob quickly had to expand to keep up with demand for River Smith's unique and, just plain ol' good home cooked catfish, chicken, and other southern Cajun favorites.
Today, people from all over the south plains of Texas enjoy River Smith's amazing catfish and chicken. Paul (Bob's son) carries on the family tradition that Bob began through Catering and Deliveries, as well as a very popular restaurant.

The name River Smith's came about because when Bob was growing up he would fish for Catfish so much with his dad, that he was nick named "Old Man River". That is where the name River came from, but Bob thought River Corcorran's would be too hard to remember, and so River Smith's came to be.

River Smith's is a proud holder or the coveted "Top Performer Award", awarded to top performing restaurant with the health department.
